As I was browsing through Pinterest several weeks ago, I came across a recipe for a salad that seemed alot like one of my favorite salads that I occasionally buy at Whole Foods Deli. It is a perfect Autumn salad and would be a great addition to your Thanksgiving table.
The main ingredients are shaved brussels sprouts, cranberries, quinoa, and pecans in an orange poppy seed dressing. Mmmmm.
I did substitute this brown rice and quinoa blend that I had in the pantry for the quinoa in the recipe (I will provide the link for the recipe at the end of the post).
It is also delicious as a main dish with some grilled chicken on top and the last of the summer tomatoes on the side. I think it would also be delicious with leftover Thanksgiving turkey cubed and mixed in.

I would like to offer some suggestions to the recipe. Add the zest of half an orange to brighten the orange flavor a bit. Substitute some kale for half the brussels sprouts in the salad to change it up a bit. Make twice the amount of dressing called for. Since this salad consists of quinoa, it really soaks up the dressing and you may want to add a little bit more as you eat it during the week or drizzle it over your chicken if you are adding grilled chicken.
