Here in northern Indiana, things are a bit frigid! Today has dawned bitterly cold at -9 degrees as I am writing this. I have moved my laptop from my desk area in the basement to the kitchen table so that I can have a view of the birds frantically eating their weight in birdseed to keep warm and the beautiful sunshine. I always love winter looking at it from the Inside-Out! Yesterday was the big snow here. At one point in the morning after shoveling, I snapped a few pictures of the beauty of it from my front porch.
Both beautiful and desolate looking. In contrast to todays’ sunny and minus 9, yesterday was a snowy but balmy 29.
Meanwhile, at the back of the house, the birds were stocking up.
The birds were almost frantic at the feeders yesterday. It was a VERY BUSY place.
Vanessa was doing a lot of this. Can’t you almost hear her saying, “seriously…..when will this snow end?”
I decided that it was a wonderful day to cook up a pot of Chicken ‘N Stuffing soup. Super easy, delicious, and body warming. Let’s get started!
Get your soup pot out and on the stove at the ready. then dice up some of these:
Carrots, celery, and onions.
Saute these until they start to become tender in a little butter or olive oil. I used a combination of both–the olive oil because it is healthier and the butter for the flavor.
Now add 3 quarts of chicken broth and your chicken. If you have leftover chicken or turkey, dice it up and throw it in there. If not, you will need to cook some chicken breasts which is what I had to do this time. I used two. At this time, I also added salt, pepper, and poultry seasoning. Let this simmer for about a half hour or so until your veggies finish cooking and all the flavors start to incorporate. Now for the secret ingredients:
A box of Stove Top Stuffing and 1/2 cup of gravy mix. First add the 1/2 cup of gravy mix and get it stirred around and incorporated. Then dump in the box of stuffing mix. I usually give this another 1/2 hour on the stove to thicken up and become extra delicious. And then you can sit down and enjoy.
Here is the recipe.
Chicken N Stuffing Soup
2 cooked chicken breasts (or leftover chicken or turkey from a previous meal)
3 large carrots, sliced
3 celery ribs, sliced
1 small onion, diced
3 quarts of chicken broth
1/2 cup of poultry gravy mix (chicken, turkey, or poultry flavor–there are all different brands out there)
1 box of Stove Top Stuffing mix (chicken or turkey)
1/2 – 1 t. salt (Start off with less and add more later as their is already salt in the stuffing, broth, and gravy mix)
1/2 t. pepper
1/2 t. poultry seasoning (there is already some in the stuffing mix)
Follow above directions and ENJOY!
Moving on to today. I am enjoying this as I am writing.
The sunshine and the birds.
They are really fluffed up today against that bitterly cold wind. I am going to have to brave the temperatures to go out and fill the feeder.

The bed in my sewing room and a sunny window. This is where they watch for rabbits and other goings on in the neighborhood. They vie for the warm position atop the giant stuffed dog. Cleaning and reorganizing the sewing room is on my agenda for the rest of today……sigh. It will take me the whole rest of the day to accomplish that. I will take you on a tour of my creative space when I have conquered the disorganized mess. And now, I am going to enjoy a cup of tea and a thick slice of brown bread before I take it on!
