If you have been following along on my facebook page, The Morton Street Project, you know that I have had a giveaway going on! In an attempt to get everyone transferred from Morton Street Coffee to The Morton Street Project, I decided to give away a tub of our popular and much loved Pineapple Pecan Chicken Salad to everyone that “liked” the new page. The winner will now be revealed and I will also be giving all of you the recipe so that you can make your own. Here is the recipe:
PINEAPPLE PECAN CHICKEN SALAD
2 cups cooked, cubed chicken
Pineapple Pecan Cheesespread Mix
1 cup sour cream
8 oz. cream cheese, softened
1 can pineapple tidbits
2 stalks of celery, chopped
The recipe is actually printed on the inside of the Pineapple Pecan Cheesespread Mix header tag. The only changes we made at the coffee shop is the addition of the celery and we changed the can of crushed pineapple on the original recipe to pineapple tidbits. I stumbled upon this delicious chicken salad when I worked at Along The Pumpkinvine in Shipshewana. The mix was a favorite of our customers there and it was a huge hit at the coffee shop. We went through tubs of it every week! If it was one of your favorites, you can now have it on hand whenever you like!

And see right there on the front of the basket it says “Makes Great Chicken Salad”. You can head on over to the meat department if you need the chicken to make it with while you are there. Those Caramel Apples on the mix to the left of it sure look good!
Okay, back to the winner of the Pineapple Pecan Chicken Salad giveaway as I know you are all dying to hear who the winner was. I spun the wheel round and round and the winner was……..drumroll please……Leanna Martin of Annalea’s Boutique in Shipshewana, IN. I packed up the chicken salad, a package of buns, some napkins and forks and headed off to make my delivery. I sure was glad the wheel landed on a local yokel as I had not decided what I was going to do if the winner was someone far away…like Florida!
And here she is, Leanna Martin with her prize. She was so excited. I delivered it this past Saturday in time for her supper at the store. She was open until 8:00 p.m. on Saturday due to our annual Light Parade. Town was PACKED with parade goers. If you have not visited her boutique, it is located at 155 Harrison St. in beautiful downtown Shipshewana. She has super cute clothes, jewelry, handbags, and candles. Maybe you can get some of your Christmas shopping done while you are there! That is it for now.
