Today is the day that a lot of you have been waiting for almost forever……..the unveiling of the recipe for the legendary “Cheezy”. People have been guessing the list of ingredients, trying to re-create it and begging for the recipe for 5 years. The wait is over! We use to go through tubs of Cheezy mixture at Morton Street Coffee and now you will be able to make them for yourself whenever the mood strikes. Since we have gone back to cool temperatures for the week, I thought this would be a good time to have something warm, gooey and comforting. So lets get started. I will print the recipe out at the end of the post.
The “cheezy” mixture consists of: cream cheese, shredded cheddar cheese, shredded mozzarella cheese, mayo, garlic powder and seasoned salt. We always used homemade honey oatmeal bread at the coffee shop but you may use whatever you like. Spread a nice layer of the mixture on whatever bread you have decided on.
Put the top piece of bread on and slice it in half on the diagonal. Then you will want to give it a little “spritz” of Pam or whatever cooking spray you prefer. You may use butter but barely put any on. We found that with all the fat in the ingredients, the addition of butter on the outside made the sandwich too soggy. You just need a little spritz to help brown the outside.
This is the equivalent of ordering a diet coke with a double cheeseburger and a large order of fries. It just makes you feel better to know you have saved a few calories somewhere…ha ha!
Brown the first side on medium heat and then flip it over to brown the other side, just like a regular grilled cheese sandwich.
Now we are going to stand it up and brown the cut side. The bread in the picture looks weird because the top of the loaf I used has oatmeal flakes on it.
Look at that! Two slices of deliciousness. It was all my gluten-free brain could do to keep from stuffing it in my mouth. It was torture….and the delicious smell……Oh my!
Now put those two slices of heaven on a plate and go have yourself a “CHEEZY”! In my case, I wrapped them up and delivered them to the first person I could find. It is always fun to treat someone unexpectedly!

- 3oz cream cheese (softened)
- 3/4 cups mayonnaise
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 teaspoon garlic powder
- 1/8 teaspoon seasoned salt
- 1 tablespoon mustard
|Mix all ingredients together until well combined. Spread about a 1/2 inch layer of the mixture on a slice of bread. Top with the other slice of bread. Slice the sandwich in half on the diagonal. Spray with a light amount of cooking spray. Place the sprayed sides down in the pan on medium heat and brown. When you place the sandwich in the pan you will be able to spray the other side easily. Flip the sandwich over and brown the other side. When both sides are browned, stand it up on the cut side and brown the edge. Enjoy!|
