Last time that I visited you, I reported that I had come in contact with the nasty “flu bug”. Well, I guess we were wrong. Life does take us down some side roads once in a while doesn’t it?!! Come to find out, I have Whooping Cough!!! Can you even believe that? I have been quite a puzzlement to my wonderful Doctor but yesterday morning, he finally figured it out. When I went home and did some research on what I thought was an extinct bug, it all made sense. I should be “contagion free” by Sunday. As for the cough–I guess that is anybody’s guess. Three weeks to three months! I am staking a claim on the Three Week course which means I am halfway there.
I have been doing lots of “nothing”. I rest, do a little hand sewing, watch a small amount of TV, I try to manage small household tasks each day. Frank and Vanessa don’t even know what to do with all my down time. Fortunately, I don’t like to be out in the kind of weather that we have been having anyway.
Yesterday, before I went back to the doctor, I put a big pot of Vera’s Vegetable Beef Soup on the stove. Last week, I lived on Chicken and Rice soup. Vera is my mother-in-law and this soup has become one of my staple soup recipes when something is ailing you. Enjoy!
VERA’S VEGETABLE BEEF SOUP
- 1lb ground beef
- 1 cup chopped onion
- 1 quart beef broth
- 1 can tomatoes (large 28 oz. can or two small cans. These can be diced crushed, stewed, whatever you have on hand.)
- 1 can V-8 vegetable juice (11 oz. can)
- 1 cup sliced carrots
- 1 cup sliced celery
- 1 cup cubed and peeled potatoes
- 2 bay leaves
- 1 teaspoon salt
- 1/2 teaspoon pepper (optional)
|In a large dutch oven, brown ground beef. Drain if necessary. Add onions and cook until tender. Add all the remaining ingredients. Bring to a boil. Simmer 1 hour or more until vegetables are tender.|
I hope you enjoy this soup. It is totally customizable. Do not be afraid to add or delete ingredients. I did not have V-8 on hand but used tomatoes that were seasoned and added a green pepper. You can also add a good amount of sliced cabbage. Take care all! Go get your DTP booster and stay well this winter! I am off to do more resting. ☺
